This is my take on the cauliflower "rice" trend. I've thrown in simple Indian spices and it tastes divine. I made a batch, left the kitchen and returned to an empty bowl. I asked my 10-year old if she ate it. She said "Yes." The whole thing? "The whole thing. It was that good." Kudos to cauliflower.
Time: 10 minutes
Servings: 2-3 bowls
Add some shrimp sautéed in garlic and olive oil to make this a complete meal.
Add Cumin seeds, Ground Cumin, Turmeric and Chili Powder and cook for about 1 minute.
Add Peas and Cauliflower and cook for about 2-3 minutes.
Add Salt and Pepper to taste.
*To make Cauliflower Rice, cut cauliflower into florets. Place florets into a food processor with an S-blade. Pulse until the cauliflower resembles rice. It is also available pre-made in some grocery stores.
