HOT PEPPERMINT CACAO

Any cold day often feels like a hot chocolate kind of day. I love hot chocolate. This indulgent treat is delicious and was straining both my waistline and my digestive system. But, I still crave it. This almond and soy-based cacao alternative (different that a hot chocolate mix) is my healthier yet equally satisfying version. Cacao powder is the unprocessed version of cocoa powder. When Inca gods would drink chocolate, cacao is what they were drinking. 

I use a combination of almond and soy milk because soy is super frothy in a milk frother and almond milk becomes thicker and doesn't have that nice creamy foam to it. A few drops of peppermint extract and stevia do the trick to round out that "it's a hot chocolate kind of day" feeling. 

Time: 5 minutes
Servings: One cup

INGREDIENTS
  • ¾ cup almond milk
  • ¼ cup soy milk
  • 1 heaping tablespoon cacao powder
  • 2-3 drop peppermint extract
  • 3-4 drops Stevia liquid sweetener

PREPARATION
  1. Using a milk frother, add the almond milk, soy milk, cacao powder, peppermint extract, and Stevia liquid. 
  2. (If using a saucepan, heat the almond milk and soy milk and then whisk in cacao powder.)
