If the smell of Halal trucks stops you in your tracks, you will love this full of flavorful, healthful and easy Chicken which mimics the taste and includes that crazy good white sauce that you want to lick off your fingers. Try it as a rice bowl if you are gluten-free or on a mini naan if you want to splurge.
Time: Under 30, plus marinating time
2 Tablespoons total Dill, Parsley, Cilantro (optional)
Cucumber + Tomato Salad
1 English Cucumber, diced
1 pint Grape Tomatoes, halved
1 squeeze of half a Lemon
1 Tablespoon Parsley, chopped (optional)
¼ teaspoon Salt, Pinch of Ground Black Pepper
Put bite-sized Chicken, Red Onion, Oregano, Coriander, Paprika, Garlic and Oil in a plastic bag. Marinate at least one hour. This will taste much better if you marinate overnight.
Heat a frying pan on medium heat, pour contents from bag into the pan. Sprinkle generously with ½ teaspoon Salt and a pinch of salt. Cook for 3-4 minutes until Chicken is cooked through. Cooking time will depend on size of chicken pieces.
Rice: Make Brown rice according to directions, but add Turmeric and Ground Cumin to the water before cooking. As an option, you can use mini Naan Bread instead of Rice for this dish.
Sauce: In a small mixing bowl, add Yogurt, Tahini, Lemon Garlic, Salt and Pepper and whisk.
Salad: Toss Cucumber, Tomatoes, Lemon juice, Parsley and Salt and Pepper in a bowl.
