I have a child that winces every time I pull out another chicken recipe. So, I swapped Acorn squash in a classic parmesan recipe. Acorn squash in particular holds up well and has a nice bite to it even after baking. You can use all-purpose flour in this recipe, but I think the almond flour holds the seasoning a little bit better and makes the dish gluten-free as a bonus.
